Yacon - ‘The Diabetic Potato’

Known in Brazil as the ‘diabetic potato’, yacon root is comprised principally of water and fructo-oligosaccharides. It contains inulin, which is an indigestible sugar, thus yacon root has a sweet flavour but fewer calories than expected. Benefits of yacon are said to include helping to lower cholesterol and blood pressure, its gentle detox/cleansing properties, and its assistance in the assimilation of calcium.
